<p>Like all of my colleagues in dermatology, for years I have recommended that people have no unprotected sun exposure.  This recommendation was made because of the pro-inflammatory, photo-aging and cancer-causing effects of ultra violet light.  And if the skin is the only organ we are concerned with, this is good advice.  However, dermatology, like other sub-specialties, can often fail to see the implications of treating a single organ system at the expense of other vital organs.</p>
<p>We now know that Vitamin D (the sunshine vitamin) is produced on the skin by sunlight.  It is then absorbed and circulated in the blood stream.  Vitamin D is stored mainly in the liver and must be processed (metabolized) by the liver and kidneys before it is converted to the active form.  There are many ways to maintain a healthy level of Vitamin D, ranging from diet to healthy sun exposure.  I’ll be covering these ways in detail in Forever Young.</p>

<li>Sauté      until watercress is wilted, about 2 minutes.</li>
<li>Season      with salt and pepper.</li>
<li>Transfer      watercress to bowl and serve.</li>

<p>There’s a lot of confusion about the difference between high fructose corn syrup and regular sugar (glucose).  When we consume simple sugars such as both sugar (glucose) and high fructose corn syrup, we are causing an immediate pro-inflammatory spike in our blood sugar.  Unlike glucose, however, fructose does not stimulate insulin secretion or enhance leptin production – key hormones that regulate the appetite.  Because insulin and leptin act as signals to the brain for the regulation of food intake and body weight, fructose’s ability to circumvent these mechanisms may contribute to overeating.  This completely upsets the body’s natural balance.</p>
<p>Tip:  Opt for more whole foods, such as fruits, vegetables and legumes instead of processed and packaged foods to help reduce high fructose corn syrup in your diet.</p>
