Quinoa and Black Bean Salad with Cilantro

Today’s guest blogger, Amanda, a busy mother of 2 loves to cook and entertain incorporating staples from the anti inflammatory kitchen. Today she shares one of her family’s favorite Quinoa recipes.

Quinoa and Black Bean Salad with Cilantro

  • 1 cup Quinoa
  • 2 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes (or fresh) with green chiles
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro

Cilantro Lime Dressing

  • 5 tablespoons fresh lime juice, or to taste
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/4 teaspoons ground cumin
  • 1/3 cup olive oil

Directions:

Place 1 cup pre-washed quinoa in 2 cups chicken broth and bring to a boil. Reduce to simmer and cook until all liquid is absorbed.

While the quinoa is cooking, prepare all the remaining ingredients. Add the beans to the cooked quinoa and toss to warm them through. Add remaining ingredients and toss gently.

Prepare the dressing by combining the lime juice, salt and pepper, cumin and olive oil.

Garnish with Cilantro and lime wedges if desired.
