For many of us, this weekend marks the official start of summer and time to fire up the grill for friends and family. If you are planning a barbecue this weekend, try this delightful recipe. Not only does it taste wonderful, it is rich in skin-beautifying ingredients.
Scallop Skewers with Crispy Bacon and Lemon
Makes 6 servings
Ingredients:
- 2 pounds sea scallops
- 1/4 cup olive oil
- Freshly squeezed juice of two lemons (limes can be substituted)
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground pepper
- 10 slices Applewood smoked bacon (may substitute turkey bacon)
Preparation:
- If using wooden skewers, soak them in water. Combine the scallops, olive oil, lime or lemon juice, salt, and pepper in a large bowl or plastic bag. Marinate in the refrigerator for 30 minutes.
- While the scallops are marinating, prepare the bacon. Look for nitrate-free bacon (Usually in the freezer section of your market).
- Cut each slice of bacon into three pieces. Blanch the bacon in boiling water to par-cook it for three minutes. Drain the bacon well and set aside.
- Wrap a piece of bacon around each scallop and place on the soaked wooden skewers or metal skewers, reserving the marinade.
- Grill over medium heat, turning and basting frequently with the marinade until golden brown and the scallops are cooked through.

I am very concerned about eating any bacon or sausage because of nitrites. I read in the NYT recently if they don’t use nitrites, they use celery seed, which is converted as though it were nitrites. So do you feel that turkey bacon is safe, Dr Perricone?
Hi Janet. Dr. Perricone recommends eating nitrate free, uncured Turkey bacon. Also look to make sure the turkey bacon is hormone free.
