The Perfect Hardboiled Eggs

Many of us find it difficult to stick to a healthy meal plan during the week. I’ve found the key is to have plenty of convenient, ready to serve healthy options, such as hard boiled eggs. They last throughout the week and can be added to salads or taken on the go to help resist temptation when hunger strikes. I recommend pairing a hardboiled egg with a green apple for a healthy snack. Apples are a good source of fiber and have excellent blood sugar stabilizing capabilities.

Makes 1 Dozen Hardboiled Eggs

Preparation:

1.        Gently place a dozen eggs in a saucepan and cover with cold water.

2.        Bring to a boil and immediately remove from heat.

3.        Cover and let eggs stand for 10 to 12 minutes.

4.        Place eggs in a colander under ice-cold running water for a minute or two.

5.        Use immediately or place back in carton and refrigerate until ready to use.

Note: Eggs can be a great source of protein and omega-3 essential fatty acids. Always look to purchase eggs from cage-free chickens that are fed flax meal- they are healthier and it will come through in the taste.

  1. you can also make perfect hard boiled eggs by using your vegetable steamer!! we put ours in for 33 mintues…perfect each time…no guess work!
    I also like to keep a snack bag filled with almonds in my purse…to fight off any hunger pangs while i’m out and about!
