Thanksgiving – Start the Holiday Right

You may be tempted to skip breakfast to save your appetite for Thanksgiving dinner, but this can wreak havoc on your blood sugar.  Be sure to start the day with a breakfast high in protein and fiber to ready your body for your Thanksgiving meal.  Try pairing this easy egg recipe with a side of oatmeal and blueberries for a perfect start to the day.

Easy Scrambled Eggs

Ingredients

  • 4 cage-free eggs
  • 1/4 cup organic milk
  • 1tbsp olive oil
  • 1 small onion, chopped
  • 1/2 cup parmesan cheese, grated
  • salt and pepper to taste

Preparation

  1. Whip eggs and milk in a large bowl until combined well.
  2. In a large skillet, heat olive oil over medium heat and saute onion until translucent, stirring frequently.
  3. Pour egg mixture into skillet and cover with lid for 30 seconds.
  4. Remove lid and with large spoon stir egg mixture, making sure to scrape mixture off bottom of pan.
  5. Continue to cover and mix until scrambled to desired consistency.
  6. Serve hot with grated Parmesan cheese and salt and pepper to taste.
