Thanksgiving Side: Roasted Brussels Sprouts and Apples

Serve several vegetable-based sides to add color and nutrients to your Thanksgiving table.  This recipe contains Brussels sprouts, which are rich in sulphoraphane, an antioxidant with anti-cancer properties.  The flavors of this cruciferous vegetable are further enhanced by roasting the vegetables and adding apples for a slight sweetness.

Oven Roasted Brussels Sprouts with Apples

Yield: 2 servings.

Ingredients

  • 1 pint Brussels sprouts, cleaned and left whole
  • 1 apple peeled, cored, and cut into eighths
  • 1 teaspoon extra virgin olive oil

Preparation

  • Preheat oven to 375°. In large bowl, toss brussel sprouts, apple, and oil together.
  • Spread apple-brussel sprout mixture evenly over a baking sheet.  Roast until lightly browned.

Your nutrition advice is what I had been following on my own for a couple of years before I even knew of you because it was just what I ended up finding that finally felt good to me and it ended up curing my issues with hypoglycemia.
