Buckwheat is a fantastic alternative to other grains like rice and corn, due to its low ranking on the glycemic scale and high level of protein. The roasted buckwheat groats, called kasha, can be prepared as a filling dish that makes a great side to any meal.
Kasha
Ingredients
- 1 cup kasha
- 1 large egg, well beaten
- 1 tablespoon olive oil
- Sea salt, to taste
- Chopped fresh parsley, for garnish
Preparation
- Stir the kasha and egg together in a small bowl.
- Heat the olive oil in a saute pan over medium-high heat. Add the kasha mixture and cook, stirring to separate the grains, until toasted, 3 to 5 minutes.
- Add 2 cups water and a little sea salt, cover, and cook over medium heat until fluffy, about 15 minutes. Serve, garnished with chopped parsley
