Shiitake is the most popular mushroom in Asian cuisine and continues to gain popularity in the US. These fungi contain a variety of constituents that have demonstrated a wide range of actions, including immune modulation, antitumor, liver protection, cholesterol lowering, antiviral, and blood-pressure lowering. Shiitake extract is also a a potent antifungal agent, effective against Candida albicans.
This dish is a perfect side to meats and chicken or a delicious topping for salads.
Shiitakes Sauteed with Garlic
Ingredients
- Shiitake mushrooms, stemmed
- Minced garlic
- Sea salt and freshly ground pepper
- Minced fresh parsley
- Olive oil
Preparation
- Quarter the shiitake mushroom caps and place them in a bowl.
- Sprinkle with the garlic, sea salt, black pepper to taste, and parsley, and toss to mix.
- Heat the olive oil in a saute pan over low heat, add the mushrooms and saute until they are just beginning to crisp, 10 to 15 minutes. Serve immediately.
