Forever Young: Roses are Red, Violets are Blue (thanks to the Anthocyanins)

Blueberries are antioxidant powerhouses because they contain a variety of phytonutrients, including anthocyanins from Greek: (anthos) = flower + (kyanos) = blue.  Anthocyanins may be the most important of the visible plant pigments, responsible for the reds, purples, and blues you see in plants that have strong antioxidant properties.  They are found in fruits such as blueberries, blackberries, raspberries, black raspberries, black currents, acai, chokeberry, and vegetables such as red cabbage, watercress, and eggplant.  Fruits and vegetables aren’t the only things that get their gorgeous coloring from anthocyanins. Many flowers, such as the purple pansy, owe their color to anthocyanins.

Tip:  At your next meal, serve a colorful, anthocyanin-rich salad by mixing watercress, blueberries, red cabbage and black currents.
