Start Roasting!

Roasting is a great way to change up your vegetable routine.  It works beautifully on a variety of vegetables, including cauliflower, broccoli and Brussels sprouts, and requires very little prep time.

Oven-Roasted Cauliflower

Serves 4

Ingredients
1 head cauliflower, separated into florets
1 teaspoon extra virgin olive oil
1 tablespoon finely chopped fresh parsley

Preparation

  1. Preheat oven to 375° F.
  2. In a bowl toss cauliflower and olive oil.
  3. Cover a cookie sheet with aluminum foil; spread cauliflower evenly over it.
  4. Roast for 15 minutes.  Turn cauliflower pieces and continue cooking for antother 15 minutes.

  1. Hi, Dr. Perricone! Some time ago you recommended avoiding aluminum cookware, and I instantly thought aluminum foil was forbidden as well. But now that you mention it, is it that aluminum foil is not bad for our health?? I’ll be looking forward to your answer!
