This Salad is cool and refreshing and makes a great accompaniment to a spicy dish.
Makes 4 Salad Servings
1 ½ cups yogurt
3 cucumbers, peeled, seeded, and diced fine
1 clove garlic, minced
1 tablespoon extra-virgin olive oil
2 tablespoons fresh lemon juice
Dash of sea salt and pepper, to taste
Mix all the ingredients well and chill in the refrigerator for 2 hours. Enjoy!
