Thank you for your words. I am so grateful for the challenge — not just for the energy that I have gotten from fueling my own body based on mother nature (and not processed corn byproducts) but more so for the changes that I have made on behalf of my children. I am finding more and more ways of weaning them off of the yuck and putting more healthy foods into their diets. Yesterday I made banana bread, reducing the sugar in the conventional recipe by 2/3rds and substituting organic flax meal for 1/2 of the flour. They loved it!
The other thing I am most grateful for is my increased energy. I learned to ski in college for a P.E. requirement some 15+ years ago. I loved it, enjoyed it. I hadn’t skied in years after injuring my knee and having children. I never felt like I had the energy to do it and be safe/not reinjure my self. Since the challenge started in January, I have skied 3 times!!! No injuries! I am so grateful that the energy gave me the confidence to do something that I used to love. I had a goal of being a skiing grandma someday (seniors ski for free!) 3 Years ago this was not even a reality for me, but it is now! Aging does not scare me so much anymore. There ARE things I CAN control. Genetics and a ticking clock can’t be stopped, but I can control how I take care of my body and enjoy more fully each second ticking on that clock because I have the energy to do so. I really could go on and on about the changes in my life. I could write a book!
Thank you Dr. Perricone for the Start Fresh challenge opportunity! Amazing how changes in diet can affect how we feel on the inside and out in such a short amount of time. Your dedication to health, wellness & helping others is truely inspirational!
I’ve recently ‘found’ the Perricone diet, and beyond the results, this has finally solved one mystery for me: Every summer, I look like a million bucks (yes, I’m boasting!), and in winter, I look tired, haggard, old, etc. I always thought it was just my imagination, or maybe my summer glow (a bit of colour), but now I understand that it was because in summer, I eat nothing but the freshest foods 3 meals a day (10-a-day of fruits and veg), etc, but in winter, I eat heavy foods, bad fats, lots of potatoes and rice, and so on. So I’ve found that it wasn’t my imagination — I really did have a reason I looked so great every summer. Now I just have to learn to eat like it’s summer all year round!
