When you want a lighter, filling meal, try this easy recipe. Serve with a twist of lemon to accent the naturally good taste of fresh halibut.

Baked Halibut Fillets with Fresh Vegetables

Ingredients:

1 tsp. organic olive oil
1 cup diced organic zucchini
1/2 cup minced organic onion
1 clove garlic, peeled and minced
2 cups diced fresh organic tomatoes
2 tbsp. fresh basil, chopped
1/4 tsp. salt
1/4 tsp. ground black pepper
4 halibut fillets, about 6 oz. each
1/3 cup feta cheese, crumbled

Preparation:

Preheat oven to 450 degrees F. Lightly grease a medium baking dish or spray with vegetable oil. In a medium saucepan, heat olive oil over medium heat and stir in zucchini, onion and garlic. Sauté lightly for about 5 minutes, or until tender. Turn off heat and mix in tomatoes, basil, salt and pepper. Arrange halibut steaks in the baking dish. Top each fillet with an equal amount of the zucchini mixture and sprinkle with feta cheese. Bake 15 minutes, or until fillets flake easily with a fork.

  1. Is it too late to join the 28 day challenge and would I still be eligible for the trip to New York? It is Tuesday, January 12. I have not entered any photos as of yet but would like to take part in the contest.
    Please advise.
