Three-Bean Salad

Ingredients

15 ounce can chickpeas
15 ounce can kidney beans
15 ounce can black beans
2 cloves garlic, minced
Juice of one freshly squeezed lemon
2 tablespoons extra virgin olive oil

Preparation

1. Mix beans together in a salad bowl
2. In a cup combine garlic, lemon juice and olive oil
3. Toss beans with dressing and serve

For easy and delicious variations, add bell peppers, red onion, celery, parsley or other seasoning.

  2. This looks delicious! I’m finding that as I age I’m naturally turning away from things that are *not* healthy for me anyway and moving toward a more raw-foodist way of eating. I drawn more to nuts, fruits and veggies straight from the source if I can get them.

    O an side not, I starting collecting paintings about 5 years ago froma woman who calls herself the “Rawartist” on Ebay. She is a rawfoodie who claims healing. I know in my own life, without detoxifying my body to a certain extent it wouldn’t have healed (no cancer, but immunity problems).

    I’m a believer.

  4. I’m just finishing up on reading The Perricone Prescription, and I absolutely LOVED it! It supports everything I believe about aging, weight gain, disease, and energy levels all being related to our food intake.

    I rented it from the library, but after reading it, I have to buy it, so I can use it as a reference whenever needed.

    I slip up fom time to time but for the most part I am more concious about the foods I am eating and what I am feeding to my family. My husband read the book as well and thought it to be very enlightening.

    Totally makes sense…
