Savory Side Dish

A study at Georgetown University and published in the British Journal of Cancer found that indole-3-carbinol, a chemical in vegetables such as cabbage, broccoli sprouts, Brussels sprouts, cauliflower, bok choy and kale, actually boosts DNA repair in cells and may stop them from becoming cancerous. DNA is the material inside the nucleus of the cells that contains our genetic information. If one is genetically predisposed to cancer, it might be possible to boost the repair mechanism in their DNA and thus prevent cancer—more good reasons to love your vegetables.

Brussels Sprouts with Three Citrus Butter

 Total time: 15 minutes. Serves: 8

Ingredients

3 pounds Brussels sprouts, trimmed and sliced in half
½ stick unsalted butter or ¼ stick butter and ¼ cup olive oil
2 teaspoons lemon zest (use organic fruits)
2 teaspoons orange zest
2 teaspoons tangerine zest
Salt and pepper to taste

Preparation

Cook Brussels sprouts in a large saucepan of salted and boiling water for about 5 to 6 minutes. Drain and place on a platter. Melt butter in a saucepan. Stir in citrus zest. Pour over sprouts. Season with salt and pepper. Serve immediately.

  1. Oh i love these veggies and am a big fan of simply roasting them in the oven.. most take about 20 minutes (cauliflour and brocolli) brussel sprouts take maybe double.. but they carmelize really nice and have an incredible taste roasted.

    Here’s generally what I do.. I put the vegies I put them in a bowl, use whatever spices I want.. (oh and fennel root is delicious this way too).. drizzle a little olive oil.. toss the veges and then put them on a flat cooking sheet (with sides)

    put them in a 400 degree oven.. most 20 minutes.. (check at 10 minutes or so, stir them around so they can get a bit crispy (! not burned!!!) AND WOW.. you can tell when they’re done. the thicker vegies.. fennel, brussle sprouts, etc, they can take up to 40 mins.. but people who say they don’t like those vegs… love them roasted!!

    take them out of the oven and voila!

    for the cauliflour, make the little flourets look like popcorn and give it to the kids that way… yum!
