Enjoying great food is one if life’s pleasures. Fortunately, there are many foods and many outstanding ways to prepare them that will not accelerate the aging process, ruin your skin, and/or pack on unwanted pounds.

As always, foods that are lower on the glycemic index are much more preferable than foods that are higher. Controlling blood sugar and insulin levels is not only critical to slowing down aging and preventing weight gain, but is important in preventing the formulations of AGE’s – advanced glycation end products.

SHRIMP SCAMPI

Prep Time: 15 minutes                 Cooking time: 8 minutes           Serves: 4

3/4 cup organic olive oil

2 large cloves garlic, slivered

1 pound or more shrimp

2 tbsp. fresh lemon juice

1/4 cup fresh parsley, minced

1 tsp. salt or to taste

freshly ground pepper to taste

1 tbsp. dry sherry (optional)

In a large skillet, warm the olive oil over medium-low heat. Add the slivers garlic and cook gently, stirring occasionally. Add the shrimp and sprinkle with the minced garlic. Simmer for 1 to 2 minutes, then turn shrimp gently. Add the lemon juice, parsley, salt, pepper and sherry. Increase the heat slightly and cook until shrimp are pink, about 2 minutes, stirring occasionally. Serve immediately.
