Forever Young: Recipe Sneak Peek

This tasty salad is perfect for a healthy, colorful lunch or a tasty seafood accompaniment to any dinner.

King Crab & Watercress Salad

Ingredients

  • 4 bunches or bags watercress, trimmed of large stems
  • 4 cooked Alaskan king crab legs, shelled, cartilage removed, cut into 3-inch pieces and chilled
  • 16 cherry tomatoes
  • 16 small mozzarella balls
  • 1/2 an avocado
  • Extra virgin olive oil
  • Aged balsamic vinegar
  • Fleur de sel (sea salt)
  • Freshly ground black pepper

Preparation

  1. On 4 large plates, arrange equal portions watercress and crab legs.
  2. Arrange tomatoes and mozzarella balls attractively around lettuce and crab legs.
  3. Thinly slice avocado and add to plates.
  4. Drizzle with olive oil and vinegar to taste, and season as desired with fleur de sel and freshly ground black pepper. Serve immediately.

Forever Young: The Sunshine Vitamin

Like all of my colleagues in dermatology, for years I have recommended that people have no unprotected sun exposure.  This recommendation was made because of the pro-inflammatory, photo-aging and cancer-causing effects of ultra violet light.  And if the skin is the only organ we are concerned with, this is good advice.  However, dermatology, like other sub-specialties, can often fail to see the implications of treating a single organ system at the expense of other vital organs.
